Everybody loves banana bread! Whether you like it toasted or hot from the oven, slathered with butter or even ricotta, this is THE recipe to use!
Spelt banana bread
300 g natural yoghurt
1 tsp bicarb soda
1 ¾ cup Spelt flour
1 tsp baking powder
1 tsp ground cinnamon
2 Scoops of Vanilla ND protein powder
½ cup Stevia
70 g coconut oil
2 tbsp Golden syrup
250g mashed overripe bananas (about 2 bananas)
Preheat oven 180°C. Grease a loaf tin.
Combine the yoghurt and bicarb soda in a bowl and set aside for around 5 minutes.
Melt the butter and golden syrup until melted together. Allow it to cool, then add the yoghurt, bananas and egg.
Sift the flour, protein powder, baking powder and cinnamon into a bowl and add the stevia. Gently fold the ingredients together.
Pour batter into the tin and bake for about 45 minutes. Allow to cool... if you can wait that long!
