Chocolate biscuit ingredients
½ cup brown rice flour
¼ cup quinoa flour
¼ cup almond meal
1/3 cup coconut oil
3/4 cup coconut flour
1/3 cup cacao
1 teaspoon vanilla
1 scoop of ND Naturals Complete Vanilla Protein Powder
Sift flours, salt, cacao, almond meal into a bowl and set aside.
In a separate bowl beat coconut oil (not melted) and sugar until creamy. Add egg and vanilla. Add flours gradually beating until combined.
Place dough on a sheet of baking paper and allow to set in the fridge for at least 30mins.
When it’s a little more set, roll it with a rolling pin until around 4 mm thick.
With a knife cut pastry into even size rectangles.
Place biscuits onto lined baking tray and bake in oven for 8-10 minutes.
Allow to cool on tray for 20 minutes.
Chocolate cream filling ingredients
½ cup cashews
1/3 cup water
2 Tbsp cacao
1 Tbsp coconut oil, melted
1 Tbsp maple syrup
Process all of the ingredients until smooth.
Sandwich 2 biscuits together with the chocolate cream
Coat the biscuits with melted dark chocolate. Allow to set in the fridge for around an hour… if you can wait that long!
