  • 1 cup of strong coffee;
  • Dried figs;
  • 2 tablespoons of honey;
  • 1 whole star anise;
  • 2 tablespoons of orange zest;
  • Half a tablespoon of cinnamon;
  • 1 tablespoon of vanilla extract;
  • and 3 tablespoons of cacao nibs.

Start by putting a medium-sized saucepan on the stove. Then, add all the ingredients (except for the vanilla extract and cacao nibs) to the pan and let them simmer for approximately fifteen minutes. If the mixture has simmered properly, remove the figs and star anise from your pan. You can throw away the remainder of the anise, but keep the figs to finish your masterpiece.

Once you have removed the figs and the anise, let the liquid simmer further without covering the pan. Leave the ingredients to simmer until the liquid gets a syrup-like texture; this usually takes five to ten minutes. Then, add your figs back to the pan and add some vanilla extract and cacao nibs to finish. Then, take your pan of the fire and let everything cool before serving.

Fuel Pancakes

Pancakes for breakfast can be healthy, especially if you are making them with the following recipe. By following the recipe below, you do not only create healthier breakfast pancakes, you will also get that much-needed coffee fix you have been looking for.

To make these fuel pancakes, you will need:

  • ¾ of a cup of oat flour;
  • ¼ cup of your favourite protein powder (plain or vanilla preferred);
  • 2 tablespoons of cacao powder;
  • 1 tablespoon of cinnamon;
  • Half a tablespoon of baking powder;
  • Half a tablespoon of baking soda;
  • 1 egg;
  • ¾ of a cup of strong coffee;
  • 1 tablespoon of vanilla extract;
  • ½ of a mashed banana;
  • 2 tablespoons of hazelnuts/walnuts;
  • 2 tablespoons of unsalted butter/coconut oil;
  • and one cup of raspberries.

To get this culinary delight started, take a large bowl that is big enough to hold most these ingredients. Then, add the flour, protein powder, cacao powder, cinnamon, baking powder, baking soda and a hint of salt to the bowl. Stir the ingredients in a slow fashion, until everything is properly mixed together.

Once you have mixed the ingredients mentioned above, take another bowl and a whisk. Add the egg, coffee, vanilla extract and whisk until reasonably firm. Once everything is mixed properly, add your mashed banana and your selected nuts.

When your wet mixture is done, add the wet ingredients to the larger bowl with the dry ingredients. Mix everything together gently, and leave this mixture to rest on the kitchen counter for at least fifteen minutes.

If your batter has settled, take some butter or coconut oil and heat it in a medium-sized skillet. Then add ¼ of a cup of the batter to the skillet to make one pancake. Make sure you cook each side of the pancake for at least two minutes.

Once your pancakes are cooked, you can serve them with some extras to make them even more delicious. You could add some fresh fruits such as raspberries, or you could add some pure maple syrup to enhance the flavour. However, if you are currently on a diet, it is best to stick to the fruits and avoid any added sugar.
